Summer recipe: Ginger-Lime Water

Hey friends,

This has been my favorite summer drink in these hot, muggy days.

Ginger-Lime Water

Fresh ginger - 1/3 cup, grated

Lime - 1 large, squeezed and then slivered

First, grate the ginger and cover with 1 - 1 1/2 quarts of cold water. Bring to a boil. Turn off the flame and let stand

for about one hour. (If your ginger is very fresh, you'll be able to make one more quart of infusion with this).

Put 1/2 gallon or more of cold water in a pot and squeeze a fresh lime into it. Then cut up the rind into tiny pieces and put them in, too.

After the ginger has sat for an hour, pour the infusion through a strainer into the lime water.

Put into refrigerator, or freezer for fast chilling.

Serve as is (or add ice if you prefer)

You can adjust the amount of ginger and lime to suit your tastes.

This anti-oxidant rich, anti-inflammatory, spicy, uplifting drink is a treat on a hot day. It is so refreshing. The mixture of tastes is like a Caribbean breeze wafting through the air. Enjoy!
