Summer Delight!

Wow, summer is almost over...and it has been an especially playful one for me. Since both my current books are done, I've had time to enjoy both the Pacific and Atlantic oceans, as well as the forest and beautiful lakes where I live. The Gift of Healing Herbs has been out in the world for just five months now and I'm getting mail every day from people telling me how the herbs and the simple recipes in the book are helping them. I love getting these letters! It helps justify wayyy too many hours spent sitting on my butt and typing for three years!

The 10th anniversary edition of my first book, Healing Magic: A Green Witch Guidebook to Conscious Living is also done now and it will hit the bookstores, (both solid and virtual) on the 28th of October! If your copy is worn out, you can look forward to this new and improved edition! And if you've never gotten a copy...well, this will be your chance! More on that in another post.

Meanwhile, it's amazing to me how truly rich I feel when I walk in my front door with an armload of fresh, local peaches and another armload full of ripe, juicy tomatoes! Wishing you green summer blessings and the joy of overflowing gratitude!!!

Here is a recipe for a favorite summer meal...I have made it for breakfast several times, but you could have it anytime you choose!

Summer Delight

Cook one or two large ears of fresh corn.

Slice a ripe, juicy tomato and arrange it artfully on your plate...

Add fresh lettuce or better yet, wild greens on top of the tomato slices.

Put goat cheese on top of that

Dress with balsamic or herbal vinegar and olive oil

Put the hot corn cobs on top of all of that and roll them around to cook everything a bit.

Put butter and salt on the corn and then use a sharp knife to take all the corn off the cob(s).

Stir the corn into your salad and prepare yourself for such gustatory delight it will have you exclaiming with pure pleasure!
